Rainy Day callllllsss foooorrr Caprese Chicken!
Soooo I couldn't grill today...so I had to think of something to make for the day and thought of my favorite, caprese chicken! Yum! Here's how you make it!
Ingredients: (makes 2 servings)
2 organic chicken breasts
salt and pepper
2-3 garlic cloves, minced
2 thin slices of mozzarella
2-3 handfuls of cherry tomatoes
1 handful of basil
Heat 2 medium pans on the stove with olive oil on medium heat. Lightly salt and pepper chicken. Cook chicken breast 10-14 mins each side, depending on how thick they are! Make sure all the pink is gone! While those are cooking, mince the garlic and add to the other pan. Brown the garlic. Half the cherry tomatoes and cook for about 1-2 mins or until they start to sweat or wrinkle. Chop basil and let it all simmer for 1 min. Remove from the heat and add the basil. Top the chicken with a thin slice of mozzarella and the tomato and basil mixture. Finally, top with balsamic vinegar and enjoy!
