Fish tacos are a quick, delicious and healthy meal! I mean, who doesn't love tacos?! I found a great recipe on Pinterest, made a few changes and wanted to share it with you all! Here it is!!!
Ingredients: (makes about 10 tacos)
1 lb wild tilapia, cod or mahi mahi
2 tbs olive oil
4 tbs paprika
1 tbs chili pepper
1 tsp red pepper flakes
10 small tortillas (gluten free or non-gmo corn tortillas are best!)
1 cup cabbage
green onions (optional)
Directions: Mix fish with olive oil, paprika, cayenne pepper and red pepper flakes until well coated. Cook fish over medium heat on a non-stick pan, 4-6 mins each side or until it starts to flake. Broil tortillas for approximately 5 mins or until lightly brown. Chop tomato, avocado, mango, cabbage, cilantro and green onions for toppings. Shred fish and place in tortillas with all other ingredients, and enjoy!
I served it with a side of guac and some gluten free chips! Yum!
